Coconut and Cinnamon Rice Pudding

This is lovely, and would easily get eaten by me, let alone T.

I've substituted milk or cream here for coconut milk instead, which gives the dish a lovely flavour. Give it a go and see.

Apple, cinnamon and coconut rice pudding 




Ingredients

100g risotto/rice pudding rice
400ml coconut milk
pinch cinnamon
1 apple, grated.


Using pudding or risotto rice to make this dish

Method

1.  Place the rice in a large saucepan


2.  Add the coconut milk and pinch of cinnamon and bring to the boil



3.  Allow to simmer for a further 10-15minutes, stirring occasionally.
4.  If the mixture becomes a bit dry, try adding some more coconut milk or a splash of water.
5.  When the rice is soft and creamy, take off the heat and grate in the apple.
6.  Serve and enjoy!
